Grandma's Paleo Spaghetti Soup

Well, apparently the entire country except for New Mexico is crippled by winter weather.  Don't get me wrong, it's chilly here but we'd like to get a good dose of the snow that seems to be falling everywhere else.  Snow or not, chilly weather is soup weather!  I thought I would share with you a yummy, hearty, satisfying soup I created the other day.  It was a big hit with the whole family.  My kids thought it reminded them of their grandma's spaghetti, so I'm calling it 'Grandma's Paleo Spaghetti Soup.' It's full of vegetables and delicious protein.

I have no picture instructions for this one, seeing as how I forgot to take pics until it was finished. Luckily, it's a very basic recipe:

Grandma's Paleo Spaghetti Soup
(serves 6-8)

  • 1 lb Italian sausage
  • 1 lb ground beef
  • 2 cans diced tomatoes (15 oz each)
  • 4 c beef broth
  • 1 lb zucchini, diced (2-3 medium)
  • 1 medium green pepper, diced
  • 1 c celery, thinly sliced
  • 1/2 large onion, chopped
  • 1 t italian seasoning
  • 1/2 t dried basil
  • 1/2 t dried oregano
  • 1/2 t salt
  • 1/4 t pepper
  • 1/4 t garlic powder
Cooking Directions
  1. In a Dutch oven or large pot, brown sausage and ground beef over medium heat. Drain and return to pot.
  2. Add the remaining ingredients and bring to a boil. Reduce heat, cover, and simmer until vegetables are tender, about 1 hour.

  2. Oh, yum!! That was fantastic! I love how easy it is, yet it is incredibly flavorful and yummy. Maybe it's just me, but I could almost imagine the zucchini *was* pasta...but then I tend not to like pasta! :P This recipe's definitely a keeper!

    1. I understand your concern. You could lighten up the fats my using a turkey or chicken sausage and extra-lean ground beef.

  5. HUGE, HUGE hit at our last dinner party! We offered two different types of soup and this one was the only one with no left overs! We loved it so much, I made it 2 other times that next week, doubling the recipe each time. SUPER YUMMY!

  8. It's on the stove right now! I "spiraled" the zucchini to look like spaghetti and will add it about 15 minutes before it is done.
