'Slap Yo Mama' Caramel

For those of you with a dairy allergy, on the Paleo diet, or who eat only raw foods, caramel is typically out of the picture.  Well, this is your lucky day!  I have found a no-cook, dairy-free, 5-ingredient caramel sauce that will make you 'slap yo mama,' as Tim Hawkins would say. The original recipe can be found here, but I made some slight changes to make it creamier and closer in flavor to the caramel I've been so fond of.  


Seriously, all you need is 5 ingredients and either a high-power blender (like a Vitamix) or a food processor.  The blender would most likely create an even-smoother caramel than I achieved with my food processor.


The original recipe calls for coconut milk, but I chose to use Trader Joe's coconut cream, which is extra-thick.  I figured it would result in a much more satisfying texture and taste.  I mean, just look at that stuff! 


I ended up processing my ingredients for a few minutes, scraping down the sides, and processing some more.  I repeated this process a few times, even adding an extra tablespoon of water, since the coconut cream was so thick. I kept processing until the desired texture was reached, about 10 minutes total.  I'm sure the blending time in the Vitamix would be much quicker!



This caramel is delicious on sliced apples or just about anything else you would put caramel on.  Heck, it's wonderful straight from the spoon.  Both my food-allergic and non-food-allergic kids loved it!


Recipe:


Slap Yo Mama Caramel
(Raw, Paleo)


Ingredients
  • 10 medjool dates, pitted.
  • 1/2 c coconut cream (or full-fat coconut milk if you can't find it)
  • 2 T maple syrup or raw honey
  • 2-3 T water
  • 1 t vanilla
  • 1/2 t sea salt
Cooking Directions
  1. Add everything to high speed blender or food processor. (Start with 2 T water)
  2. Start on low speed, and blend or process until completely smooth, adding more water if necessary to blend. Scrape down the sides as necessary.
  3. Serve on ANYTHING!

  6. Wow! I am printing this out right now. Can I use regular coconut milk and just pull off the thick stuff? Or should I head to Trader Joe's? Nice find!

    1. You could refrigerate some regular (full fat) coconut milk and scoop out the thick cream at the top. It would most likely work just fine.
