Brown Sugar Cookies

Who doesn't love brown sugar?  Let it dominate your cookie, and you'll have a party in your mouth!


The other day, I came across this recipe for Brown Butter, Brown Sugar Cookies and decided to adapt it to be vegan/allergy-free.  First, the ingredients: 


Simple, huh?  Now, because this recipe uses vegan margarine instead of butter, you have to skip the browning step. Since margarine is basically oil, all you would end up with is really hot oil.  Luckily, the yumminess of the brown sugar far outweighs the benefits of browning the butter!

First, mix the 'egg' (1 T. ground flax + 3T water) and let thicken.  Then, melt the margarine and stir in the brown sugar and 'egg.'

Next, add the remaining dry ingredients and mix well.  The mixture will be a bit soft, so you will need to let it chill in the fridge for 30 minutes or so.  It will be much easier to scoop!

Mix together 2 tablespoons of white sugar and 2 tablespoons of brown sugar, and roll each rounded tablespoon-scoop of dough in the sugar mixture:


The result: brown surgar-y deliciousness! Soft on the inside and crispy on the outside:


The recipe:
Vegan Brown Sugar Cookies

Ingredients:

8 T (1 stick) vegan margarine (I like Earth Balance)
1 'egg' (1T ground flax + 3 T water)
1 c packed brown sugar
1/2 t salt
1/4 t baking soda
1/8 t baking powder 
2 t vanilla
1 1/4 c whole wheat pastry flour (or white whole wheat flour)**

2T sugar + 2T brown sugar

Directions:
  1. Mix your 'egg' and set aside to thicken. Meanwhile, melt the margarine in a medium bowl.  Stir in the brown sugar and 'egg.'
  2. Stir in the next 5 ingredients and mix well.  Chill the dough in the fridge for 30 minutes.
  3. Scoop the dough into rounded tablespoons, roll in the sugar mixture, and place on a cookie sheet at least 2 inches apart.
  4. Bake for 9-11 minutes.


**You could substitute your favorite gluten-free all-purpose flour for a gluten-free version
