Paleo Shrimp Salad
- 2 c frozen cooked shrimp, thawed and halved lengthwise
- 1 c celery, finely diced
- 1 T onion, finely diced
- 1 T fresh lime juice
- 2 T fresh cilantro, chopped
- 1/4 c mayonnaise (or Earth Balance Mindful Mayo)
- salt and pepper to taste
- In a medium bowl, combine all ingredients and mix well.
- Serve in a bowl or over fresh greens, topped with fresh avocado slices.
