Turkey Pumpkin Chili

This delicious chili is a staple at our house, once the weather starts turning cooler.  If you are familiar with SuperFoods Rx, this recipe contains 5 Superfoods in one bowl.  It's like a bowl full of antioxidants, phytonutrients, and protein!


The prep time for this recipe takes about 20 minutes, which includes chopping and sautéing. First, the ground turkey is browned.  Then, the onion, garlic, and pepper are added and cooked for about 5 minutes.:





The rest of the recipe is finished in a slow cooker. I know, I know - it's time for a new one.  I've had this Presto for almost 20 years - my sweet mother in-law gave it to me when I moved into my first apartment in college.  Well, it may not be pretty, but it still works great!  


Ok, back to the chili. Add the turkey mixture to the slow cooker, and then add the remaining ingredients.  Give it a stir, cover, and cook over low heat for 4-5 hours.



The result - a beautiful, healthy bowl of delicious chili.  I love to top mine with chopped cilantro and toasted pumpkin seeds.  Yum!

Recipe:

Turkey Pumpkin Chili
(serves 8-10)

Ingredients:
1 1/2 lb ground turkey (I prefer thigh meat)*
1 medium onion, chopped
1 medium yellow pepper, chopped*
3 garlic cloves, chopped
2 T olive oil
3 c chicken stock
1 can black beans, rinsed and drained*
1 can (15 oz) pumpkin puree*
1 can (15 oz) diced tomatoes*
2 t dried parsley
2 t chili powder (try using a little chipotle powder for a nice kick)
1 1/2 t dried oregano
1 1/2 t ground cumin
1 t salt

1 bunch of cilantro, chopped
toasted pumpkin seeds

Directions:

  1. In a large skillet, brown the ground turkey in the olive oil.  Add the onion, yellow pepper, and garlic and saute 5 minutes.
  2. Transfer meat/vegetable mixture to a 5-qt. slow cooker; stir in the remaining ingredients.
  3. Cover and cook on low for 4-5 hours or until heated through.
  4. Serve with chopped cilantro and toasted pumpkin seeds.

    1. Thanks, Cindy! My daughter LOVED the avocado sammy! We toasted the some rice bread, which she really liked as well. She gobbled it up pretty quickly!
